Menu Engineering for Sustainable Food Choices

The design of food menus has an important influence on meal choices. In a series of trials with Westminster University, produced while employed at the World Resources Institute, behavioral nudges on menus were tested to determine their impact on the sustainability of food choices. Across these studies, we found that adding vegan 'V' symbols or decoy dish options to menus does not influence choice, while increasing the ratio of plant-based dishes and adding indulgent language and pro-environmental messages promotes more plant-based options.
